USDA Guidelines Are A Crock!

I have longed believed this and often tell my clients the very things this article lays out. The USDA and FDA are not a trusted sources for nutrition. The article below, which I have broken up into 4 parts,
will illustrate that point and give light to the right way to eat.

SUMMARY

Current USDA dietary guidelines are based on the flawed notion that cholesterol and saturated fat are unhealthy. They are unrealistic, unworkable, unscientific and impractical; they have resulted in widespread nutrient deficiencies and contributed to a proliferation of obesity and degenerative disease, including problems with growth, behavior and learning in children. The US government is promoting a lowfat, plant-based diet that ignores the vital role animal protein and fats have played in human nutrition throughout the ages.

The pyramid with its strictures against fat consumption does not recognize variations in human metabolism. Recommendations for fat restriction are predicated on the assumption that fat causes weight gain and heart disease; several recent studies have shown that that restriction of natural fats actually leads to more obesity in both children and adults, while the refined carbohydrates, polyunsaturated and trans fats that frequently replace natural saturated fats contribute to weight gain and chronic disease. Restriction of animal fats in children leads increased markers for heart disease and to deficiencies of vitamins A, D and K2, needed for growth, strong bones, immunity, neurological function, and protection from tooth decay.

RECOMMENDED NEW GUIDELINES:

The Weston A. Price Foundation strongly urges the USDA Dietary Guidelines committee to scrap the food pyramid and replace it with the following Healthy 4 Life guidelines, based on four groups of whole foods.

Every day, eat high quality, whole foods to provide an abundance of nutrients, chosen from each of the following four groups:

1. Animal foods: meat and organ meats, poultry, and eggs from pastured animals; fish and shellfish; whole raw cheese, milk and other dairy products from pastured animals; and broth made from animal bones.

2. Grains, legumes and nuts: whole-grain baked goods, breakfast porridges, whole grain rice; beans and lentils; peanuts, cashews and nuts, properly prepared to improve digestibility.

3. Fruits and Vegetables: preferably fresh or frozen, preferably locally grown, either raw, cooked or in soups and stews, and also as lacto-fermented condiments.

4. Fats and Oils: unrefined saturated and monounsaturated fats including butter, lard, tallow and other animal fats; palm oil and coconut oil; olive oil; cod liver oil for vitamins A and D.

Avoid: foods containing refined sweeteners such as candies, sodas, cookies, cakes etc.; white flour products such as pasta and white bread; processed foods; modern soy foods; polyunsaturated and partially hydrogenated vegetable oils and fried foods.

Vitamin D Packed Recipes

Eggs Benedict
Serves 4

Ingredients:
8 slices turkey bacon
2 sprouted grain English muffins
2 Tablespoons vinegar
4 eggs
butter

Hollandaise Sauce

Ingredients:
2 teaspoons lemon juice
2 teaspoons white vinegar
3 egg yolks, room temperature
8 Tablespoons butter, melted
Herbamare or salt and pepper

Directions:
Cook turkey bacon under the broiler until crisp. Keep warm. Prepare the hollandaise sauce. Pour lemon juice and white vinegar into a small glass or metal bowl. Add egg yolks and whisk until light and frothy. Place bowl over pan of simmering water and whisk until sauce thickens. Gradually add in melted butter while constantly whisking. Season and keep warm. Poach the eggs. Add vinegar to a large pan of boiling water. Lower heat so that water is simmering. Crack eggs and gently slide into water. Discard egg shells. Simmer for about 4 minutes. Remove with a slotted spoon. Toast the muffin halves, butter them and put onto plates. Place 2 slices turkey bacon and an egg on each muffin and top with sauce. Serve immediately.

Variation:
Spinach is another great option instead of turkey bacon.

Salmon Salad
Serves 1-2

Ingredients:
2 4-ounce salmon fillets, baked and chunked
1 Tablespoon omega-3 mayonnaise
1 Tablespoon flaxseed oil or garlic-chili flax
chopped onions
chopped peppers
chopped celery

Directions:
Bake salmon fillets in a 400-degree oven for 10-15 minutes, or until cooked through. Cool and chunk. When cooled, combine with the rest of the ingredients and serve over lettuce or toasted sprouted bread.

Pineapple Creamy Treat
Serves 2-3

Ingredients:
1 cup organic ricotta cheese
1 Tablespooon unheated honey
¬Ω teaspoon vanilla extract
1 cup pineapple

Directions:
Mix ricotta, honey and vanilla extract. Top with pineapple.

From Jordan’s Desk–Meet Mr. T

You may have heard of Mr. T. He’s a fictional character from The A-Team, but I’m talking about another Mr. T—T cells. T cells are part of the adaptive immune system. That means that they function by teaching the immune system to recognize and adapt to constantly changing threats.

T cells are white blood cells that can transform into two types of cells—at least once they’re activated. One type searches and destroys infectious agents, while the other type records information about the invading pathogen and communicates that knowledge to other parts of the immune system. That’s why the latter cells are called “helper” cells; they help the immune system respond quickly if there is a future infection with a similar invader.

The key here is that these T cells must be activated in order to function properly. If they’re not activated, then they just sit there—with no immune response—and those invaders can march right on in and gain a foothold.

So what activates these killer T cells? Vitamin D.

You heard right. Scientists have known for some time now that vitamin D supports bone health and much more, but until recently, they’ve not known that vitamin D supports the immune system—and, in particular, serves to activate T cells so they can fight off viral and bacterial invaders.

In fact, researchers from the University of Copenhagen found that T cells rely on vitamin D in order to activate and that they remain dormant, “naïve” to the possibility of threat if vitamin D is lacking in the blood. In short, if there’s not enough vitamin D in the blood, then the T cells remain passive and no immune response occurs. Their study was published in the journal Nature Immunology.

Professor Carsten Geisler, of the Department of International Health, Immunology and Microbiology, explains further that “when a T cell is exposed to a foreign pathogen, it extends a signaling device or ‘antenna’ known as a vitamin D receptor, with which it searches for vitamin D. This means that the T cell must have vitamin D or activation of the cell will cease. If the T cells (white blood cells) cannot find enough vitamin D in the blood, they won’t even begin to mobilize.”

And that could spell trouble—especially since 75% of U.S. teens and adults are deficient in vitamin D.

Make sure your T cells are activated this season. Introduce Mr. T to Mr. D—vitamin D, that is. Together, they make a pretty amazing A-Team of their own, especially when it comes to a healthy immune system.

I have been talking with clients about this for what seems to be years. Their first question to me is “what about Salmonella?” when I tell them that a raw grass fed organic egg is
natures complete protein. And no not just the egg whites either.
I have been consuming up to 6 raw eggs a day for the last 6 years… But they are at least organic if not fully grass fed. Federal officials have matched the Salmonella responsible for current egg recalls to bacteria found in barns and chicken feed at two major Iowa egg producing facilities.

This has relaunched the debate over whether eggs from smaller, organic farms are safer.

Organic farmers argue that the conditions under which large agribusiness raises and houses chickens create an environment where bacteria can spread more easily. The birds are often kept in cages that are stacked closely next to and on top of each other

According to Live Science:

‚Äú‚ÄòThe smaller the farm is, the lower the likeliness of Salmonella,‚Äô said infectious disease specialist William Schaffner … ‚ÄòThe general thinking is that larger chicken farms are much more difficult to keep clean, and this makes it easier to transmit Salmonella.‚Äô‚Äù

Ben & Jerry’s gets all their milk from dairies that have pledged not to inject their cows with the Monsanto-developed genetically engineered bovine growth hormone (rBGH). Why, then, can’t Haagen Dazs, Breyers and Baskin-Robbins do the same?
The three ice cream brands continue to use milk from cows injected with rBGH, a hormone that’s been banned in Canada, New Zealand, Japan, Australia and all 27 nations of the European Union. Meanwhile, Haagen Dazs and Breyers have the audacity to call their ice cream “All Natural.”
John Robbins, writing in the Huffington Post, notes that:
‚Äú… [I]njecting the genetically engineered hormone into cows increases the levels of a substance called IGF-1 in their milk. Monsanto’s own studies found that the amount of IGF-1 in milk more than doubled when cows were injected with rBGH. Studies by independent researchers show gains as much as six-fold …
[T]he excessive levels of IGF-1 found in the milk of cows injected with rBGH may pose serious risks of breast, colon and prostate cancer.”
Pre-menopausal women with even moderately elevated blood levels of IGF-1 are up to seven times more likely to develop breast cancer.

It may surprise you to learn that a significant portion of U.S. milk is actually genetically engineered. This milk, and the ice cream, cheese, and myriad of other dairy products made from it, contains genetically engineered bovine growth hormone, or rBGH.
U.S. milk producers treat their dairy cattle with rBGH because it boosts milk production. But this artificial growth hormone also increases udder infections in cows, leading to pus in the milk along with excessive use of antibiotics in the cows, which is triggering the creation of antibiotic-resistant superbugs and leaving residues of antibiotics in your dairy.
Worse still, milk treated with rBGH also contains higher levels of insulin-like growth factor (IGF-1), a hormone linked to breast, prostate and colon cancers in humans.
How Was This Cancer-Causing Hormone Ever Approved?
You may be interested to know, especially before you go out to buy your next pint of ice cream or gallon of milk, that rBGH is NOT a hormone that’s commonly used around the world. On the contrary, it’s been banned in Canada, New Zealand, Japan, Australia and all 27 nations of the European Union.
Dr. Shiv Chopra, who spent 17 years in the Human Safety Evaluation of Drugs given to food-producing animals in Canada, explains his first reaction when a drug safety review for rBGH landed on his desk.
“I was concerned,” he said, “so I raised some questions, because it was a growth hormone … The questions I raised were very simple, normal scientific questions.
If you’re going to give something to food-producing animals, then under the laws of both the countries [Canada and the US], the company must demonstrate that it will produce no harm, ultimately, to people who consume that product.
They said no, they don’t want it tested, and there is no need to test it because it’s the same hormone, although it’s genetically engineered, that the cow produces.
I said it doesn’t matter. Even if it’s naturally produced hormone obtained from the cows, if you give an excess of it, just like if you take too much insulin for yourself, you can die‚Ķ
I said, “You must test it in laboratory animals as required under the law.” They did not want to test it‚Ķ”
Dr. Chopra never received any of the studies he’d requested to make a determination about the safety of rBGH in Canada, and therefore refused to approve it.
The U.S. Food and Drug Administration (FDA), however, went ahead and approved rBGH for use in the early ‘90s, despite nationwide protests by consumer groups. The FDA didn’t even require that rBGH be adequately tested before allowing it on the market.
Normally, a standard test of new biochemically produced products and animal drugs requires 24 months of testing with several hundred rats. But rBGH was tested for only 90 days on 30 rats.
What Prompted the FDA to Approve rBGH?
Michael Taylor, a former vice president of public policy and chief lobbyist at Monsanto, which makes rBGH, is now the Deputy Commissioner of Foods for the FDA.
Who is Michael Taylor?
He is the person who not only “oversaw the creation of GMO policy,” according to Jeffrey Smith, the leading spokesperson on the dangers of GM foods, but also oversaw the policy regarding Monsanto’s rBGH.
The hormone was approved in the United States while Taylor was in charge at the FDA. Shortly thereafter Taylor left the FDA to become Monsanto’s vice president and chief lobbyist, although today he is now back at the FDA.
Taylor’s decision to approve rBGH was one of the most controversial the FDA has seen, and was made against the advice of numerous scientists (some who even worked at the FDA), farmers and government leaders.
As Smith wrote:
“Taylor also determined that milk from injected cows did not require any special labeling. And as a gift to his future employer Monsanto, he wrote a white paper suggesting that if companies ever had the audacity to label their products as not using rbGH, they should also include a disclaimer stating that according to the FDA, there is no difference between milk from treated and untreated cows.”
Taylor’s white paper, which again was untrue as even FDA scientists acknowledged differences in the rBGH milk, allowed Monsanto to sue dairies that labeled their products rBGH-free!
That‚Äôs right ‚Ķ milk producers who are committed to providing healthier milk are not allowed to say it‚Äôs ‚ÄúrBGH-free‚Äù — without adding a big disclaimer saying there are no known health risks of rBGH ‚Ķ
But, then, this is entirely untrue.
Why I Suggest Avoiding All Dairy Products that Contain rBGH
The scientific evidence of the dangers of rBGH milk is explained in great detail in Dr. Epstein’s book What’s in Your Milk?. Samuel Epstein, MD, a scientist at the University of Illinois School of Public Health, is one of the top experts on cancer prevention, and he has been speaking out against rBGH in milk, the so-called “crack for cows,” for years.
As Epstein wrote:
“This [rBGH milk] contains very high levels of a natural growth factor known as IGF-1…
IGF-1 stands for Insulin-like Growth Factor 1. So growth factor 1 is a natural growth factor and is responsible for normal growth but when you drink rBGH milk, you have very, very high levels of this natural growth factor.
When you drink it, the IGF-1 survives digestion and is readily absorbed from your small intestine, into your blood.
Increased levels of IGF-1 have been shown to increase risks of breast cancer and we have about 20 publications showing this; risk of colon cancer [shown] by about 10 publications; prostate cancer by about another 10 publications.
And a further concern: increased levels of IGF-1 block natural defense mechanisms against early cancers, [mechanisms] known as ‘apoptosis.’”
The risks are quite glaring and explain why the United Nations Food and Safety Agency, which represents 100 nations worldwide, decided NOT to set safety standards for rBGH milk in 1999, which essentially banned U.S. milk from all of Europe.
That’s right. You will not find Europeans, or Australians, Japanese, or Canadians, drinking rBGH milk because the health risks are just too great.
Unfortunately, if you live in the United States you can find rBGH milk in most supermarkets, not only in milk but also in ice cream, cheese, yogurt, sour cream, and just about any other dairy product you can think of.
You Can Help Prompt REAL Change in the Food Arena
You very well may be drinking rBGH milk and not know it, as no labels are required. This is despite the fact that nearly every American wants it labeled, but the government, as usual, bowed to industry lobbyists and, amazingly, does not require this on the label.
However, as increasing numbers of people and dairies choose to avoid rBGH, you can find labels that say “rBGH-free” or a similar variation. Organic milk is also rBGH-free.
This is certainly preferable to milk and dairy products that contain this dangerous hormone … but I still don’t recommend drinking any milk, organic or otherwise, that is pasteurized.
You can avoid both the risks of rBGH and pasteurization by only drinking raw milk that comes from a small farmer you know and trust. This is the only way to drink milk if you’re interested in protecting your health.
I do realize, of course, that many of you may treat yourself on occasion to a bowl of ice cream as well, but in so doing you’re likely exposing yourself to rBGH. As with milk, you can avoid this risk by making your own homemade ice cream using raw milk as a base, but if you purchase ice cream from one of the major brands like Breyers or Dreyer’s it will contain rBGH.
Well, Physicians for Social Responsibility (PSR) has organized a major drive to get these two large ice cream producers to stop the use of rBGH.
Even though I don’t advise eating these desserts for anything other than a very occasional treat, if at all, each additional corporation that stops the use of rBGH is a victory for the health of the American public.
If you’d like to contact Breyers and Dreyer’s and ask them to stop the use of rBGH, PSR explains exactly how you can do so. So far major corporations ranging from Starbucks and Ben & Jerry’s to Yoplait and Dannon have stopped using rBGH in response to consumer demand. Hopefully, and with your help, the trend will continue until Monsanto’s rBGH is driven out of the food market entirely.

Since the beginning of human history, people usually walked everywhere they went, and physical activity was part of their lifestyle. They didn’t have to make room for it in their schedules. In fact, mere survival necessitated movement.

With our modern conveniences, however, our immediate survival is no longer contingent on our physical activity. Our buildings, shopping centers, works areas and homes are all designed so that we don’t have to move around much. That’s not how we’re hard-wired to live, though, and this “cushy” lifestyle has translated into weight gain and lowered health levels. In fact, the sedentary modern lifestyle can contribute to as many as 1,000 calories per day not burned and a 50% reduction in physical activity. While our immediate survival may not rely on physical activity, our long-term health may definitely be tied to our activity level.

An article in The Journal of Physiology reminds us that we are made for a physically active lifestyle, but we’ve been on a downward spiral to inactivity—and it’s nothing new. In 1953, almost 60% of American children failed to meet even a minimum fitness standard for health. Can you imagine what the percentage was for adults if it was 60% for children? Or better yet…can you guess what the percentage would be now—especially considering that children have generally become even more sedentary?

The article continues and gives the scientific basis underlying how physical inactivity affects at least 20 of the most deadly chronic disorders. The hope is that raising awareness could serve as a starting point for developing additional strategies n the ongoing war against inactivity-induced chronic health conditions that plague our inactive modern society.

In other words, inactivity can bring on serious health problems—and we need to change our ways.

Among the disorders associated with an increase of incidence in inactivity are:

• Cardiovascular diseases—including heart disease, congestive heart failure, coronary artery disease, angina, and myocardial infarction; hypertension, stroke, intermittent claudication, and platelet adhesion and aggregation
‚Ä¢ Metabolic diseases–including Type 2 diabetes, obesity, dyslipidemia, and gall bladder disorders
• Cancers—including breast cancer, colon cancer, prostate cancer, pancreatic cancer, and melanoma
• Pulmonary diseases—including asthma and chronic obstructive pulmonary disease (COPD)
• Musculoskeletal disorders—including osteoarthritis, rheumatoid arthritis, osteoporosis and physical frailty
• Immune dysfunction disorders and neurological disorders—including cognitive dysfunction

Those are serious side effects of inactivity.

It’s time to get back to old school exercise—even if it’s just walking several times a week. It can mean the difference between health and unhealth.

Got Yeast?

Yeasts are single-celled organisms present in all of us, but when they start multiplying rapidly, look out. The yeast usually responsible for unhealthy effects is called Candida albicans. It can proliferate out of control, leading to yeast overdrive in various places in the body—especially when the body’s immune system is imbalanced.

You can find yeast imbalance in the mouth, the esophagus, the gut, the genitourinary area and other places. Here’s what happens. Yeast crowds out normal gut flora and changes the composition of gut enzymes and diminishes the gut’s ability to properly absorb nutrients.

Likewise, yeast releases toxins that are then absorbed through the gut, leading to unhealth. Yeasts can also cause allergic responses similar to hay fever allergies—caused by a special class of antibodies called IgE antibodies.

Yeast imbalance isn’t comfortable, either. It can lead to fatigue, irritability, gut cramping and bloating, sore/itchy throat, genitourinary unhealth and much more.

Need to balance your system—yeast-wise? Here are some suggestions:

Do:
Support your immune system
Eat a diet of healthy proteins, fats, vitamins, minerals, antioxidants, enzymes and probiotics
Avoid sugars and other unhealthy carbs
Avoid unnecessary medicines, especially broad-spectrum antibiotics and steroids
Manage stress
Maintain hormonal balance
Avoid unnecessary surgeries

Don’t:
Eat a lot of sugary, high-carb foods
Stress yourself or your immune system
Overuse antibiotics
Overuse steroids
Deplete your enzyme levels or other important nutrients

Additionally, be sure to maintain balanced gut flora, a healthy digestive tract and a balanced immune system. All of these can go a long way in creating the yeast balance necessary for health.

Upside-Down Coffee Cake

Upside-Down Coffee Cake

1/4 cup organic unrefined coconut oil
1/2 cup organic turbinado sugar
2 medium apples, sliced thin

Mix oil and sugar together and spread in bottom of 9×13 pan. Arrange apples. Prepare coffeecake batter (below).

Coffee Cake
2 cups sprouted whole grain flour (or whole grain spelt flour)
1 cup organic turbinado sugar
3 teaspoons baking powder
1 teaspoon sea salt
1/3 cup organic unrefined coconut oil
1 cup milk
1 egg

Heat oven to 350. Mix all ingredients in large mixing bowl for 2 minutes. Spread on top of apples (above). Top with streusel (below). Bake until toothpick comes out clean, about 50 minutes. Immediately invert pan onto heatproof plate. Let sit for a minute to let the remaining stuff drizzle on coffee cake.

Streusel

1/2 cup chopped nuts (optional)
1/3 cup turbinado sugar
1/4 cup sprouted whole grain flour (organic whole grain spelt flour)
1/2 teaspoon ground cinnamon
3 tablespoons firm organic butter

Mix all ingredients until crumbly.
